"Ikejime" is a traditional Japanese fishing method used to immediately kill fish. In this method, the fishs nervous system is quickly destroyed and blood is removed to maintain freshness and improve meat quality. Typically, a needle is inserted into the fishs brain to instantly stun it by destroying the spinal cord, followed by cutting off blood flow. This method is highly regarded for minimizing fish stress and delivering the highest quality fish.
Furthermore, the blood contained in the fish flesh retracts to the gut cavity, which produces a better coloured and flavoured fillet, and prolongs shelf life.
This method is considered to be the fastest and most humane method of killing fish.Ikejime-killed fish is sought-after by restaurants as it also allows the fish to develop more umami when aged.
